When soaked in liquid for 15–20 minutes they absorb several times their weight in water and develop a characteristic gel-like texture, making them versatile across a wide range of recipes.
Stir into smoothies, lassi, or fruit juice; add to overnight oats or curd; use as an egg substitute in baking (1 tablespoon chia mixed with 3 tablespoons water, rested for 5 minutes).
