Makhana, also called fox nuts or phool makhana, are the puffed seeds of the prickly water lily plant (Euryale ferox). They are harvested from ponds and lakes, predominantly in the Mithila region of Bihar, India. The seeds are roasted at high heat until they pop and puff — similar in principle to popcorn — producing the light, crispy white spheres sold as makhana. They have a mild, slightly starchy flavour on their own and absorb seasonings readily when roasted with ghee or oil.
Heat a dry pan or kadai on a low-to-medium flame. Add the makhana and stir continuously for 8–10 minutes until they turn crisp and develop a light golden colour. Season with rock salt, black pepper, or chaat masala while still warm. They can also be roasted in a small amount of ghee for a richer flavour. Allow them to cool completely before serving — a small bowlful is a satisfying portion. Makhana can also be added to kheer, gravies, and other Indian preparations.

Makhana absorbs moisture quickly and loses its crispiness when exposed to air. Store in an airtight container in a cool, dry place away from direct sunlight. Unroasted makhana keeps for up to 60 days in a sealed container. Once roasted, consume within 2–3 days for the best texture.
