Gaund Katira is tragacanth gum — a different product from regular gaund (gond). Its defining characteristic is that it swells dramatically when soaked in water, forming a clear, odourless gel. Unlike regular gaund, which is fried in ghee for use in ladoos and panjiri, Gaund Katira is never cooked — it is soaked overnight and added to cold drinks, sherbets, or thandai.
Soak a small amount — typically no more than half a teaspoon per serving — in a generous quantity of water for several hours or overnight. It will swell to many times its original volume. The resulting gel is then added to summer drinks, lassi, rose sherbet, or similar preparations. Do not attempt to fry or heat it as you would regular gaund.

Store in an airtight container in a cool, dry place away from humidity. Gaund Katira absorbs ambient moisture easily and will clump if left unsealed. When stored correctly, it is shelf-stable for several months.
