Gaund Button is edible gum (gaund) shaped into small button-like discs for convenient portioning. Gaund is a natural resin traditionally used in Indian winter preparations such as panjiri and gond ladoo. The button form makes it straightforward to measure precise quantities before cooking.
Gaund Button is fried in ghee over medium heat, where each piece puffs up and expands to several times its original size. It is then drained, cooled, and crushed or crumbled before being folded into panjiri, atte ka ladoo, or similar preparations. Use a small quantity to begin — the expansion can be significant.
