इसे कैसे बनाएं

चरण 1 of 4

Soak & Blend the Figs

⏱ 0–10 min

Rinse 200g of dried anjeer under cool running water. Place them in a bowl and cover with warm water. Soak for 20–25 minutes until the figs have plumped and softened.

Drain the soaked figs and transfer to a blender or food processor. Pulse 6–8 times into a coarse paste — you want small chunks, not a smooth puree. A little texture in the halwa is traditional and delightful.

In a small bowl, dissolve a few saffron strands in 1 tablespoon of warm milk. Set aside; it will bloom into a deep golden colour within 5 minutes.
💡 विशेष सुझाव Do not over-blend the figs — a rough, jammy texture gives the halwa its signature bite and a better mouthfeel than a smooth paste.

चरण 2 of 4

Cook the Base

⏱ 10–20 min

Heat a heavy-bottomed kadai or wide pan over medium flame. Add 3 tablespoons of pure desi ghee and let it melt until it shimmers but does not smoke.

Add the coarse fig paste to the hot ghee. Stir continuously using a wooden spoon or silicone spatula — the paste will sizzle and begin to release its natural sugars. Cook for 7–8 minutes, stirring without pause, until the mixture darkens slightly and pulls away from the sides of the pan.

This bhuno (roasting) step is critical: it drives off excess moisture, deepens the fig flavour, and builds the base caramel notes that make anjeer halwa distinctively rich.
💡 विशेष सुझाव Keep the flame at medium throughout — high heat scorches the natural sugars in the fig paste within seconds. If you see any darkening at the edges, reduce immediately.

चरण 3 of 4

Enrich with Milk & Spice

⏱ 20–25 min

Pour 2 cups of full-fat milk into the roasted fig base in a slow, steady stream, stirring constantly to prevent lumps. The mixture will bubble vigorously at first — that is normal.

Cook on medium heat, stirring every minute or so, for about 5 minutes until the milk is absorbed and the halwa returns to a thick, glossy consistency.

Add 3 tablespoons of Khand (raw cane sugar), the seeds from 4 crushed green elaichi pods, and the bloomed saffron milk. Stir well. Taste and adjust sweetness — Khand adds a subtle caramel warmth that refined sugar cannot replicate.

Cook for a further 2–3 minutes, stirring, until the halwa binds into a single soft mass and ghee visibly separates along the edges of the pan.
💡 विशेष सुझाव Adding Khand instead of white sugar preserves trace minerals and gives the halwa its characteristic warm-amber colour. Source: traditional Indian confectionery technique.

चरण 4 of 4

Garnish & Serve

⏱ 25–30 min

Turn off the heat and let the halwa rest in the pan for 2 minutes. It will firm up slightly as it cools, reaching the perfect soft-set consistency for serving.

Transfer to a serving dish or individual bowls. Scatter sliced premium California almonds and pistachio kernels generously over the top. For a festive touch, add 2–3 extra saffron strands directly on top.

Anjeer halwa is best served warm. It can also be refrigerated for up to 3 days and reheated on the stovetop with a splash of milk to restore its silky consistency.

For Navratri and other festivals, serve in small earthen bowls (matke) lined with a silver warq for a heritage presentation that honours the spirit of the occasion.
💡 विशेष सुझाव A pinch of powdered black pepper added with the elaichi lifts all the flavours and is a classic Sindhi confectionery technique dating back generations.

अक्सर पूछे जाने वाले प्रश्न

Can I use fresh figs instead of dried anjeer for this halwa?

You can, but the results will be quite different. Fresh figs contain much more water, so the halwa will take longer to cook down and will be lighter in colour and flavour. Dried anjeer has concentrated sugars and a deeper, more complex taste that is essential to the traditional anjeer halwa recipe. If using fresh figs, increase cooking time and reduce milk quantity by about one-third.

How long does anjeer halwa stay fresh, and can it be stored?

Anjeer halwa stays fresh at room temperature for up to 6 hours in a cool, dry spot. Refrigerated in an airtight container, it keeps well for 3 days. To reheat, add a tablespoon of milk and stir over low heat until silky again. Avoid the microwave — it dries out the halwa and makes it grainy. For gifting, pack in small clay bowls sealed with cling film and refrigerate until delivery.

What are the dry fruits benefits of adding almonds and pistachios to anjeer halwa?

The dry fruits benefits of garnishing anjeer halwa with almonds and pistachios go beyond flavour. Almonds may support heart health and are a source of Vitamin E, while pistachios are associated with healthy cholesterol levels and contain antioxidants. Together, they add contrasting crunch to the soft halwa and boost the overall nutrient density of each serving. For best texture, slice rather than chop the nuts — thin slivers stay crisp longer.

Can I make anjeer halwa without milk for a vegan version?

Yes. Substitute full-fat coconut milk in the same quantity (2 cups) for a rich, vegan anjeer halwa. Coconut milk adds a mild sweetness that pairs beautifully with saffron. Replace the desi ghee with refined coconut oil. The cooking process and timings remain identical. Note that coconut milk halwa sets firmer when cold, so add a splash of water when reheating.

Is anjeer (dried fig) good for digestion, and how much should I eat daily?

Anjeer is a well-known source of dietary fibre, with 9.8g per 100g (USDA FDC #168191), and its consumption is associated with supporting digestive regularity in traditional Ayurvedic and modern nutritional contexts. Enjoying anjeer halwa in moderate portions (80–100g) is a delicious way to include dry fruits benefits in a festive sweet. As with all desserts, enjoy as part of a balanced diet.
